The Niagara Peninsula is a world-renowned wine appellation known for producing complex food friendly wines, with strong acid and fruit flavors and aromas. After seeing great kosher wines coming out of France, California and Israel, owners Avi Gislason and Toby Berkel decided to begin the journey of producing a kosher expression of the Niagara region's fine wines. Together with the winemakers at renowned Diamond Estates, Avi and Toby use the same techniques and procedures that have made Diamond one of Ontario's top wineries. This Ice Wine, made from the Vidal grape, is Canada's most famous wine. It is luscious, with notes of creme bruleé and toffee. The wine is not syrupy, but is light and has notes of apricot and peach.
