Domaine du Trapadis is located in the Southern Rhone Valley. The winery has been organic since 2010. The word Trapadis is derived from the word Trapalas, which means hole (in Provençal.) The hole is a natural spring near the vineyard, providing water for the surrounding hamlet. The vineyard is completely devoid of herbicides, pesticides or chemical fertilizers, with 35 years the average age of the vines. 50% of the harvest is de-stemmed, the grapes are lightly crushed and put into cement vats. The cap is manually punched down every 3 days. 6 days of maceration, before spirit is added. The wine's development is slow and temperature controlled. When the tannin-sugar-alcohol balance is reached, the wine is pressed. There is 100g of residual sugar per liter. This is a delightful wine, and can be served as an apéritif or as a dessert wine.
