Our friends Yaakov and Naama Berg of Psagot Winery, located a short 15-minute drive from Jerusalem, have turned out a beautiful Viognier. Sourced from several vineyards in the Judean Hills, about 550 meters above sea level. Grapes are manually harvested (on two different dates) at dawn and undergo careful inspection. The juice was frozen and then transferred to fermentation, with about 50% of the early harvest fermented in French oak. Wine continued to age in barrel for four months. The wine has a pleasant mineral structure, balanced alcohol and refreshing acidity. Layers of green fruit and mineralization are highlighted, giving aromatic layers of white and citrus fruit. Medium-full bodied white wine. Kosher and Kosher for Passover.
